200 g plain flour

150 g castor sugar, plus extra to sprinkle

10 g baking powder

1 pinch fine salt

80 ml vegetable oil

1 large egg

80 ml milk

1 tsp vanilla extract

190 g fresh or frozen blueberries

RECIPE STEPS
1Preheat oven to 200 degrees. Lie muffin tins with paper liners
2Place flour, sugar, baking powder & salt in the blender. Pulse to Combine
  • 200 g plain flour
  • 150 g castor sugar, plus extra to sprinkle
  • 10 g baking powder
  • 1 pinch fine salt
3Add oil, egg and vanilla extract. Press AUTO. Stop as soon as combined.
  • 80 ml vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
4Gently fold in blueberries with a spatula
  • 190 g fresh or frozen blueberries
5Divide batter between prepared liners. Sprinkle each muffin with a little sugar prior to baking.
6Bake muffins for 15-20 minutes, or until a skewer comes out dry.
7Once baked let sit for 5min, then transfer to a cooling rack.
8OPTION: Use raspberries or any other berries you have. Add some chopped white chocolate for a little twist.

This is an excellent muffin, so easy & only one egg!
