1400 g pork shoulder

8 garlic cloves

2 onions

4 dried chipotle chillies

1 tsp smoked paprika

1 tsp ground cumin

3 tbsp of light brown sugar

4 tbsp soy sauce

3 tbsp tomato sauce

3 tbsp Dijon mustard

4 tbsp Worcestershire sauce

4 tbsp white vinegar

250 ml water

1 pinch salt

1 pinch black pepper

RECIPE STEPS
1Add the garlic, onions, paprika, chipotle chillies, cumin, sugar, soy sauce, tomato sauce, mustard, water, Worcestershire sauce, vinegar, salt and pepper to the metal bowl. Run EXPERT 00:30/speed 15/0°C.

2Slice the shoulder joint in half and then submerge in the marinade, fat side up. Slow cook the pork. Run SIMMERING 02:00h/speed 0/110°C.
