5 g parsley
10 sprigs thyme
250 g pork sausage meat
200 g turkey
200 g flour
1 pinch salt
1 pinch pepper
150 ml sunflower oil

RECIPE STEPS
1Boil 6 eggs for 5 minutes and plunge straight into an ice bath to stop the cooking process.

2Peel the eggs and leave to one side.
3Pulse the bread in the food pro to make bread crumbs. Place into a bowl and set aside.

4In a separate bowl whisk up 2 eggs. Add the flour, salt and pepper to a third bowl.

5To make the sausage mixture, start by adding the herbs to the food processor and pulse till roughly chopped.

6Now add the sausage meat and turkey meat. Process to combine.

- 200 g turkey
7Now encase an egg with the sausage meat and then dip into the flour. Then transfer to the whisked eggs, back to the flour, egg one more time and then cover with the breadcrumbs. Repeat for all 6 boiled eggs.
8Heat the oil in a deep pan and once hot, drop the scotch eggs in. Fry until golden brown and crisp and allow to drip dry on a paper towel for 2 minutes.

9Serve with cranberry sauce.
