2 courgettes

40 g of grated parmesan

0.25 tsp of salt

1 pinch of black pepper

1 lemon zest

150 g plain flour

1 tsp of baking powder

1 tsp of olive oil

1 dollop of yogurt (optional)

1 tbsp sweet chilli sauce (optional)

2 eggs

RECIPE STEPS
11. Using the grater attachment coarsely grate the courgettes.
  • 2 courgettes
22. Place the courgettes in a sieve and press down with the back of a spoon to get rid of any excess liquid.
33. Place the rest of the ingredients in the food processor and process to form a thick batter. (You may not need all the flour). Stir in the courgette.

44. Heat up a large non-stick frying pan with a little olive oil.

55. Drop spoonful's of the batter into the pan and cook until the underside is deep golden brown, about 2 minutes. Flip and cook on the other side for a further 2 minutes. Repeat with the remaining batter.
66. Serve immediately, with a dollop of yoghurt and / or sweet chilli sauce"

definitely needs less flour. Otherwise, very floury taste
