150 ml of water

150 g of sugar

500 g of large mangoes

1 lime

Chef's tip

If you are pressed for time, you can replace the sugar syrup with 150ml of cane sugar syrup. For a mango-banana sorbet, reduce the quantity of mango to 350g and replace with 150g of banana.

RECIPE STEPS
1Add the water and sugar into a saucepan. Bring to a boil until you obtain a syrup. Leave to cool.

2If you use the Juice Extractor or Juice Filter with your Magimix machine, pass the mangoes using the Extra Press accessory. If not, finely blend the mango flesh in a food processor or in a blender with the lime juice.
  • 500 g of large mangoes
  • 1 lime
3Mix the mango purée with the syrup. You can pass the mixture through a sieve to remove the mango fibres.
4Place the mixture in the refrigerator until it is cold. Press the Artisanal ice cream mode. Pour the mixture into the Gelato Expert.
5When the light flashes, your sorbet is ready. Serve your sorbet immediately or store it in the freezer.

I found the sorbet to sweet for me so I would cut the sugar by half. The texture was so smooth. I put the Mango flesh through the juice extractor which I though was great. No straining and no fibres.
